Bone marrow

We've been enjoying osso bucco in these cold winter months. We all love eating the marrow out of the bones. DS (17 months) especially enjoys it ... he demands as much marrow as he can get, loudly slurps it off the spoon, and then lets out an ecstatic shout! It seems like delightful baby food, with a texture like delicate custard that just melts in your mouth.

Is there data on the nutritional content of marrow? It's mostly fat with a little bit of minerals, right? Is it a special kind of fat?

I don't really use a recipe, but here is one with pictures:

We use beef shanks rather than veal... we use rice or sorghum flour to coat the meat for browning (we're a gluten free household)... and we serve it with simple mashed potatoes instead of risotto.

My ds used to LOVE bone marrow at that age, too! I used to buy lamb shanks cut into pieces, and then feed him "bones!". He's 27 mos. now, and will only eat meat IN things, like in wild rice or inside a quesadilla, or fish in hashbrowns. Sigh. That reminds me that I used to stick the lamb bones in his wild rice when it was cooking to get the marrow in there. I need to start doing that again. We've gotten into a major food rut, and I know I can do better. (At least I know I can do better in a month, after our move is over... my husband has moved ahead of us, so I am caring for ds alone, and doing all the packing too... all this with the serious sleep-deprivation that comes with having an all-night nurser!)
