Pork neck bones make wonderful soup, and are used in many traditional recipes and considered a delicacy. Do a google on pork neck bone soup and you will find a lot of recipes from all different cultures. Since I am Korean, here is a great blog with a traditional pork neck bone and potato soup:

Personally, I don't cook very fancy in my house. So bone broth is bone broth and I eat it all without worrying about what spices to use. I usually make soups and throw in whatever veggies and spices I have on hand. I have lots of pork bones b/c we raised and butchered 2 pigs last year!
