mac 'n goat cheese recipe

DD#1 is sensitive to dairy and I've been getting her Amy's mac and soy cheese. I'm really trying to cut out soy but she loves her mac and cheese. Does anyone have a mac and goat cheese recipe?

I've not tried mac & goat cheese, but I would imagine you could make it the same as with any other cheese.

I make a "gravy" (melt Tblsp butter over med. low heat, toss on a couple Tblsp flour, gradually add milk until nice & thick) then add shredded cheese until nice & melty and pour it over our noodles. Or, at least that's how I remember doing it! Haven't made it in forever.

You can use goat butter if you have it or lard works well to.
