Beef broth help

I have a bag of frozen beef bones from the butcher. He told me they are ones people get for there dogs, but I am assuming I can use them too

Can I just put them into the crockpot with water (and the vinegar) and turn it on? Do I have to roast/defrost or anything first? I have only made stock from cooked chicken bones so far.

That's exactly what I would do. I don't see any reason for it to not work Definitely get the water up to boiling for a while to fully cook them if they're raw, but otherwise... I think you do it just like chicken bones.

The only reason you'd need to roast them first is if you want a darker, more flavorful stock, which is nice if you're going to be drinking it straight (veggies add to the flavor, too, of course), but if you're using it to make other things (soup, cooking grains, etc.) then a light beef stock works fine. I never thaw the bones first.
