Need some ideas for ground beef

I always buy it but never do anything more with it than chili or meatloaf. I could use some fresh ideas. Open to just about anything other than "South of the Border" cooking...not something DH or I enjoy.

Beef stroganoff is good with ground beef, though it is tradtionally made with chunks of meat. You didn't mention spaghetti sauce, but that's about the only way I can get my DS2 to eat meat, so I thought I'd bring it up -- I serve it over spaghetti squash, and sneak a bunch of veggies into the sauce, as well.

You can make hamburger steaks -- just season the meat to taste, add an egg, shape into steaks, and pan-broil. Serve with a pan sauce, as otherwise it will just taste like a giant bland hamburger.

I make an awesome hamburger and cabbage soup. I also make stuffed cabbage with ground beef, which even my cabbage loathing DH adores. My mom makes a great cornbread pie that has a ground beef filling and cornbread crust -- you could make it TF with traditional preparation of the corn masa for the cornbread.

This recipe for garbanzo bean casserole is good and easily TF adaptable. This is another ground beef recipe from recipezaar.com that's also simple and tasty. You can do a search for "ground beef" and come up with several recipes there, actually.

Do you like asian flavors ? I have a recipe for Thai ground beef that has red curry, tomato and coconut milk and you serve it with rice and lettuce wraps-I'll type it up if you are interested. How about the meat browned and mixed with rice for stuffed bell peppers? Meatballs? Ground beef sandwiches (I assume similar to what people call "sloppy joes") -you could also use the same mixture and make it into a casserole and top w/ potatoes,nt cornbread, nt biscuits, etc.

I've been making "hamburger soup" which is basically chicken stock, cokked ground beef, and veggies. Like chicken soup with ground beef instead of chicken.

NTs no-tomato spagetti sauce over brown rice noodles
lettuce wrapped burgers
meatballs
on salads
Mixed with asian flavors (soy sauce, ginger ect) and put in lettuce wraps
I really like ground beef stuffed bell peppers

meatloaf

I use 2 lbs ground beef for meatloaf. I chop a whole onion (we love it, but half would suffice) three cloves of garlic, two eggs, and a cup or less of falafel mix. It had been an experiment but it turned out delicious. The kids liked theirs the way they always like meatloaf...with ketchup, but it was good w/out. April

This definitely sounds interesting!

I'll admit that DH and I are VERY picky eaters. I'm trying to change, him less so, but at least DD will eat just about anything. I'm just stuck in a rut. So any ideas you want to share will be most welcome, even if I don't use them right away.

With ground beef we make:
Meatballs with tomato, sweet/sour, gravy, or white sauce.
Cabbage rolls
Stuffed zuccini
Meatloaf
Grilled hamburgers
Meat pie
Stuffed Peppers
Spaghetti sauce
Beef croquettes

We love galumpki, stuffed cabbage. I mix equal amounts ground beef and gound pork (my grandmother also used a third ground veal, but I don't eat cute animals) with some rice and finely chopped onion. Meanwhile, I put a whole head of cabbage into a pot of boiling water for a few minutes to soften the leaves. Then just pull off a leaf, gently roll a loose handful (don't squish too tight or they aren't tender) and tuck the cabbage around as well as you can. Put a layer of sauerkraut on the bottom of a big pot, add a layer of galumpki, another layer of sauerkraut, another layer of galumpki, one last layer of sauerkraut and top it off with a few remaining cabbage leaves to hold in all the moisture. Cook on low for several hours. Serve with rye bread, dark beer and some accordian music.

Meat-za

1lb gr.beef
1 egg
2 handfuls almond flour
big spoonful tomato sauce
oregano

mix it all up very well, spread thinly over parchment paper, top with sauce and cheese and toppings. bake 400 until done all around. YUM!

My favorite "unusual" ground beef dish is Mou-fah-rah-kay from the LLL cookbook. Cook up beef with diced onions (about 3 to 1 lb meat), add chopped zucchini and cook until that's tender. Season with salt, pepper and a little allspice. Then make little wells in the mixture, crack eggs into them, cover and let eggs poach.

The hard part for me is getting the eggs right, they always end up more done than I want.

Can other flours be subbed for the almond flour? Or can I just grind up almonds in the food processor? This sounds very interesting!

Haven't tried it yet myself but I keep eyeballing a good Moussaka (sp?) recipe. Traditionally I think you use ground lamb but beef will do. Looks like you basically brown the beef, layer it with eggplant slices, tomato sauce and top with an egg mixture to make it custard-y and cheese. I also am going to try making Indian style meatballs..just mix in curry flavors and serve with rice- if you like Indian.

Otherwise we do meatloaf patties, stuffed in peppers, spaghetti squash, chili (there are 101 ways to do chili hehe) and hamburgers.

I've been making "beef mojito" lol, I think I *might* have made up the name.

I saute an onion & a few cloves of garlic in some CO or EVOO. Add a pound of ground beef, some sea salt (cook till almost done) & add about 1/3 of a jar of TJ's Cuban Mojito sauce.

We use white corn tortillas spread with raw sour cream, some avocado slices & the "beef mojito."

It's SO easy.

I did it recently without the flour, just egg. It seemed to work pretty well--flour of some kind might help it hold together even more though. I used a large pie pan rather than baking sheet.
