Sure, here is it is. Sorry this is late I forgot to come back and check this thread!
-3 slices bread (whole wheat - torn or cubed into small pieces)
-3 tablespoons parmesan cheese (I add more)
-2 garlic cloves (finely chopped)
-8 oz mushrooms (fresh)
-2 tsp olive oil
-1 egg (beaten)
-10 oz frozen spinach (thawed & drained)
-3/4 cup ricotta
-15.5 oz canned cannellini beans
-pinch of salt
-pinch of pepper
Preheat Oven to 350. Grease or line 9x9 inch pan with foil.
Cook garlic & mushrooms in olive oil in skillet until done (about 10 minutes).
In a bowl mix spinach, beans, ricotta, egg, salt, & pepper. Then add cooked mushroom mixture and stir. Spoon into pan and even out the top. Add bread to the top and then sprinkle with parmesan cheese.
Cook until bread is getting brown, about 25 minutes. Let stand 10 minutes to thicken and then serve.
