Easy vegetarian slow cooker ideas

Hi,
Does anyone have some favorite vegetarian crock pot recipes they could share?

I jsut throw in a bunch of veggies, whatever I have in the fridge, some beans, stock and shredded cabbage to thicken

How about this one:
Sweet Potato Casserole
4 large*sweet potatoes, steamed and mashed

2 oz (1/4 cup) melted butter or margarine
2 T. sugar

2 T. light brown sugar, packed

1 T. orange juice

2 eggs, beaten (or egg sub, such as banana)

4 oz(1/2 cup)*evaporated milk (or soya milk)

4 oz. (1/2 cup) chopped pecans

4 oz*(1/2 cup)light brown sugar, packed
2 T. flour
2 T. butter, melted
Lightly butter the Crockpot. Mix mashed sweet potatoes, butter, 2 tablespoons* sugar, and 2 tablespoons brown sugar together in a large bowl. Beat in juice, eggs, and milk. Transfer to the crock pot.
Combine pecans, brown sugar, flour, and 2 tablespoons butter. Spread evenly over the top of the sweet potatoes. Cover and cook on high for 3 to 4 hours or low for 5 to 7 hours.

Or:
Hearty Veg Stew
4 oz dried split peas
4 oz dried kidney beans
4 oz dried lentils
4 oz pearl barley
1 tin tomatoes in juice, diced
4 oz*white wine (optional)
3 oz*soy sauce
3 oz apple juice
1/2*rib celery, diced
1 large parsnip, diced
1 large carrot, diced
11 tin sliced mushrooms, drained
1 onion, diced
1 tsp dried basil
1 tsp dried parsley
1 bay leaf
3 tablespoons garlic powder
1 tsp black pepper, ground
8 oz rice
1 1/2*pints hot water
1 vegetable stock cube
Rinse beans and then soak overnight in water.
Drain beans and place in Crockpot. Add* wine, soy sauce, and apple juice. Dissolve the stock cube in the hot water, and pour over the beans. Add remainder of the ingredients and cook on low for 8-10 hours.

Note oz in this is fl oz, so 4 oz is 1/2 cup, 3 oz is 1/3 cup, etc.

Just Me- Have you written any vegetarian crock pot books?? I've been looking for one. I just got your book Veggie on a Budget but haven't had time to look through it in detail yet. Plus, I can't go grocery shopping til Monday. heh heh.

How cool to have a cookbook author on the thread!!!

I would choose a MDC member's book over other books, but I did want to mention that I have Fresh from the Vegetarian Slow Cooker and it gets raves.

Not specifically. I did write a crockpot book, but its not in print, still a pdf, and it has recipes for veggies, meat, seafood, etc. More a general book. I loe my crockpot though. I use it at least twice a week.

ETA...I just emailed you the file. Hope you find it useful

Yes, I would highly recommend getting the advertising siggy. Try it for a few months.

Mamabird32 (and anyone else), what are your faves from that book? I have a new copy and a newly vegetarian DP and am curious to know what others really like from the book. Today I am actually making the 5-layer vegetable strata with pesto-infused beans, it sure smells good!

Jamie, I have made this in the crockpot before and it comes out great. Also good, and pretty quick, on the stove top. It's one of my staple recipes b/c it's very versatile:

Black Bean and Sweet Potato Stew


1 can or 2 cups dried (soaked and cooked) black beans
1 onion, diced
1 small green pepper, diced
1 clove garlic, minced
1 large or 2 medium sweet potatos, peeled and cut into 1-inch dice
1 small can tomato sauce
cumin, chili powder, salt and pepper to taste

Saute onion and pepper in a splash of olive oil. Add garlic, sweet potatoes, and black beans, and saute for a few minutes more. Add tomato sauce and spices. Add a cup or so of water, depending on how saucy you like it, and simmer for 15-20 minutes, or until sweet potatoes are tender. If desired, you can add some minced chipotles in adobo, tabasco or other hot sauce, or fresh cilantro. I like to serve this on brown rice, but it would be good on white rice, as burrito filling, or just by itself.
