Allergies and food suggestions?

I'm really at a loss of what to feed DS, when DH isn't home. I hate to cook a whole meal for us, but I don't know what convenience foods that are healthy to make for him. For instance tonight, I'm either going to do a sandwich, chips, and carrots sticks or white pizza (pizza dough, olive oil, garlic, italian seasonings, turkey peperoni, and olives). Both foods DS couldn't chew. I feel like he really needs a meal other than some mixed veggies or fruit (so some protein, fiber, etc). With his allergies it makes it so difficult. He's allergic to dairy, tomato, egg, and strawberry. He also likes to self feed so soy yogurt is out (he doesn't have the spoon down).

Can anyone give me some suggestions. I hate giving him tyson chicken nuggets alot, since it really isn't healthy. I've thought of beans and plain rice. What else would be convenient?

When it's just dd and I, I do a lot of beans and rice and quessadilla's. Since your ds is allergic to dairy, you could try soy cheese instead. Good luck! I hate when dh is gone! It makes cooking a pain!

I do lots of cooked veggies warmed up with olive oil, and meats reheated with olive oil--chicken is easy to digest, and I've found if I simmer roast/venison/lamb for a couple of hours in water it gets really tender and easy-to-digest as well. Have you tried avocado? It's kind of slippery but some mamas have had success rubbing the pieces with a bit of flour or other grainy substance to give it some grip.

Yes, we have done avocado, but I think he might be allergic to that too. I'm going to try again in a month or two, as he loves it, and the allergy isn't confirmed.

Soy cheeses are kind of iffy... many contain casein (milk protein) to make them melt like real cheese.

I can think of 3-4 cheese substitutes off the top of my head... Follow Your Heart, Tofutti, VeganRella and Soycos Vegan and Vegan Rice cheeses.

My dd likes the Follow Your Heart stuff the best, although she prefers Tofutti when we put it on pizza.
