We actually are JUST finishing some work in our kitchen. We did basically all of the work ourselves and saved a ton of $$. If you have basic carpentry skills and are willing to work slowly and steadily, learning slighly along the way, I would say do it, you will save a lot in the end.

We also saved soem $ by only doing lower cabinets and using SS shelving around the stove and sink instead of upper cabinets (from Ikea -the Grundtal Line of Kitchen accessories). All my bulk items sit in canning jars up there and are easily accessible and the pots and pans are also out and easy to get too (spices too). I'll post a pic soon.

Think a lot about where you would put things to make it easily accessible, organized, simple and you can come up with a good plan that works for you. Think about the way you cook and clean and what you need available where. Don't worry about what someone else will think of it as long as it works well for you!

We are in the midst of a green kitchen remodel.

Bamboo floors

sustainably harvested cherry cabinets built by our next door neighbor

AFM safecoat No-VOC paint

concrete countertops made by said neighbor (who is also our contractor)

we bought used appliances/sink/faucet, etc.

halogen and florescent lighting

double-paned windows

dishwasher with water heater inside
