Good Granola Recipe with soaked grains??

My husband loves granola, but I've been reading on these boards how important it is to soak grains so that's a concern for me in making him granola. Does anyone have a good granola recipe using TF with soaked grains or I guess maybe no grains???

He likes sweet and crunchy, vanilla tasting kinds he can put on top of yogurt.

I think this is granola mom's recipe???? Modify as you need


8 cups rolled oats
1/2 cup melted butter
1/2 cup melted coconut oil
1 1/2 cups yogurt
2 cups water
1/2 cup honey
1 tsp. sea salt
1 tsp. cinnamon

Your choice of additional "stuff": dried fruits, crispy nuts, dried coconut, etc.

1. Combine oats, butter, coconut oil, yogurt, and water. Pat down, cover with a plate, and leave on the counter for 48 hours.

2. Preheat oven to 200F. Place honey, salt, and cinnamon in a small bowl and place bowl in a pan of simmering water (think double boiler here); heat mixture until honey is very thin. Mix honey mixture with oat mixture.

3. Place on parchment paper lined cookie sheet or other shallow pan, and bake until the mixture is completely dry and crisp. It usually takes several hours, in my experience.

4. Mix in remaining ingredients. Store in an airtight container. Enjoy with milk, cream, applesauce, yogurt, whatever you like.
