What does your Whey smell/taste like?

I used to separate my milk for the whey and it always smelled and tasted sweet and tangy. I stopped for about 6 months and now I am getting my raw milk from a different farm.

I have wasted milk twice now while trying to do this again. : Each time the separation did not look, smell, or taste like it used to (it is more bitter/sour and very white--none of that yellow, gelatinous look and not a real clear seperation). I don't know what I could be doing wrong. Could it be the cows winter diet, a cold kitchen, or too much homogenization taking place in the farm's tank?

Any thoughts?

I've only made mine from yogurt, but yeah, it's yellowish and sweet and tangy. It seems like I've seen whey like you described when I was making kefir and it separated to show the whey. I have no idea why though.
