yes there is--i learned it on flylady (although i'm a flylady dropout
but seriously..yes you can make a chicken last 3 days (or more if you tried)
buy one whole chicken (i prefer organic but find a good 3-5 lb chicken)
day 1: roast that sucker in the oven with some carrots, potatoes and an onion (i also will sometimes put a lemon in the cavity and use some fresh rosemary..mmm) i usually do this on a sunday
day 2: take all the meat off the bones (save the carcass!) and make burritos w/black beans, salsa, cheese.. (or sometimes i will make a pot pie or a chicken salad..)
day 3: throw what's left in a crockpot or on the stove. add water, an onion, some celery and make soup. strain out all the bones and throw in whatever veggies you have laying around (usually i use the ones that are about to go bad) and some beans or potatoes and some good seasonings/herbs...(i like to use a chipolte pepper and white beans and serve it with tortillas)
i use the leftover soup for lunches or freeze it for another meal so often we get at least 4 meals from one chicken..
being a new single mama this has been a lifesaver and we're eating very good
