My ds's favorate way to eat avocado's is in avocado rolls. If we are out, we just get standard ones at a sushi restaurant, but at home, we make them better.

I take a piece of sushi nori, break it into quarters, then on each put some avocado slices and some red cabbage craut, lactofermented of course. THen roll it up, and hand it to him to eat while I make the next one. THey can't be made in advance because the cabbage liquid makes the seaweed soggy, and I don't fill it will anything sticky like sushi rice or even roll it properly with a sushi roller, so it isn't going to stay rolled up on its own. But, they are a yummy, fun, nutritious snack. We get all the goodness of avocado, trace minerals from sushi, and probiotics from the lactofermented veggies. :-)
