question about soaking nuts.

I'm wondering if the nuts have to be dried before they are edible? Like if I was planning on putting them in muffins or someting with a wet batter like that could I just toss them in still wet from soaking or do they need to be dried to compleat the process?

hmmm....good question!

i've never tried adding them to anything while still wet, but i HAVE had the unfortunate experience of tasting them before they were completely dried. not good!

If you don't dry them out the texture will probably be off. Just eat a wet one to see what I mean!

I've used walnuts in muffins without drying them. I didn't notice a big difference.

The drying process is for taste. The soaking process takes care of the phytates. I think it would depend on the cooking process of your recipe. I would think that for recipes with a wet batter, where the food is going to cook longer, you wouldn't notice the difference but in cookies, you will probably notice since you expect the nut to be crunchy in a cookie.
