I found this pretty interesting. The first one talks about making stock by baking in the oven overnight. I haven't tried it yet- just thought I'd share:

That was a fun article to read. I learned not to put my veggie scraps in until the very end. And I will try roasting my meat scraps. And I like the idea of doing the stock in the oven. Guess I need to get a stock pot afterall.

Sorry to derail: is there a thread about how to chop bones? I just found a source for bison bones...
