So, what's better: sourdough or sprouted grain?

I've been buying Berlin Bakery sourdough spelt bread for dd2, but our hfs has their sprouted spelt bread too. So... which is better? I s'pose the *best* would be sprouted sourdough, but that's asking a bit much I guess

I don't really know for sure as I haven't yet drawn my own conclusions. From what I've heard in Sally Fallon lectures, soaking is supposed to be better than sprouting and leaveners like sourdough better than yeast, so I would say the sourdough bread is better. I bloat on regular breads, but my body seems to like real sourdough bread leavened with a sourdough starter about the same as sprouted flour yeast bread.

er... dangers? I didn't realize there were any objections to sourdough!

FWIW, when I eat sourdough I get all achey and go into a carb-funk. When I eat sprouted bread I'm fine.

Ah... conventional sourdough with white flour That hadn't even occurred to me, since the sourdough I've made, and what I'm looking to buy, are with whole grain spelt Here I thought you meant, like, dangerous because the culture could become contaminated with a pathogen!

Or "dangerous" because you could eat too much (especially with fresh butter and honey ), and not be able to get up from the table afterward.

Or because you baked your first whole grain batch with a new starter and the resulting loaf is so heavy and brick-like that you could knock someone out with it!

I would tend to go with the sourdough, just make sure the ingredients list "starter" or something like that. The red flag would be "vinegar" as an ingredient and "yeast".

Hmm what about sprouted sourdough bread that I can get...but it has added wheat gluten? I've been buying Ezekiel sprouted grain breads...is added wheat gluten worse than yeast?

Well to some people they are. I can't eat sourdough regularly because of that. All our bodies are different.
