Candied orange peel...

I have never made this. But my compost will be overflowing soon with oranges at the rate we are eating them! Is there a way to make candied orange peels, NT style? Or are they generally ok, as long as added to slow rise breads and such?

I love love love candied orange peel. I doubt there's much TF about them, though I'd say, like everything, In Moderation. If I had so many peels around that I wanted to use them, I'd make the candied peel, then eat a little; use a little in baked goods; and save a bunch to give away or serve at Christmas. Er... at least in theory...

candied orange peels are just peels, sugar and water. You could probably replace the sugar with any of the more natural sugars, but I would imagine it would have to be a dry one (not a syrup).

Although I did a quick google and did find a recipe using honey instead of sugar, but the recipe was from the 14th century.

ok, , so my next question is: who has a good recipe?
I mean, I have been wolfing down oranges lately. I can't get enough!
