I have had my gall bladder removed, so I can't speak to his issue exactly. However, the gall bladder releases bile to help digest fats and if your dh's diet has more fat than usual (even if it's good fat) and he has gall stones, then he may be releasing stones along with the bile(which can be anywhere from somewhat painful to excrusiatingly painful, believe me).
I haven't found that Nourishing Traditions or Eat Fat, Lose Fat adequately covers the gall stone/lack of gall bladder issue. I have troubles eating the amount of fat their diet recommends and am trying out different approaches to help my body digest fat better.
If your husband is having gall bladder attacks, there are liver/gall bladder flushes he can do to try and release stones before going the surgery route. I wish I had tried a series of flushes first. My naturopath said at the time it wouldn't help, but from what I've read since, I don't think she was right.
What symptoms is your dh experiencing?

How do you flush the gall bladder? My mom is dealing with this, and I think there is more to it than meets the eye.
Carnitine can help digest fat. Be sure to have your carnitine levels checked before supplementing though. People with secondary carnitine deficiencies often have trouble digesting fats.

You can google Gall bladder flush, or look at curezone.com. There was an excellent website that I got a lot of info from but I haven't looked at it in a couple of years and now I don't remember the name of the woman who ran it. Maybe someone else would know...
he's was having constant pain
with nausea. We went to the health food store and got milk thistle, Stone Free and 2 gallons of natural organic apple juice. He started to do the fast but he was too hungry after doing juice most of Sat. but I'm still having him do low fat. He says the pain has gotten quite a bit better, being sporadic rather than constant. He doesn't seem to have attacks like I've heard, but he says the pain a sharp pain like someone sticking their elbow in his ribs. He's hadit pretty regular for a year, and the foods that set it off are citrus and salsa, and either of those with dairy are even worse. he's going to the doctor today, so we'll see. Its hard to say with those things, but i needed to know how his works with our tf method. He was really not low fat before, but last year he was on a major kick with the monster drinks after getting off claritin (he'd crash w/out something). He eats a lot of salt and soda junk. and fake creamers. And he recently started fasting from beer and coffee, and the pain began full time. I'll get back to you.

have you tried breakstone tea? that's what did it for me. you can get it from internaturals.
i had horrible gallstone problems for several months after my son was born and started drinking the tea after the third that landed me in the e.r. in the middle of the night. i drank it every day for about 2 months, then stopped last september. i've been on a normal diet since i started drinking the tea and continued eating normally after stopping and haven't had a problem since.

I did the gallbladder/liver cleanse a few times. I did the one where I fasted most of the day, then had the olive oil/fresh grapefruit juice mixture before bed. I did feel pretty nauseated that day and the next.
I've had 2 liver/gb ultrasounds. The first time, I had "gallbladder sludge" and an enlarged liver. The second one, after doing a couple of cleanses, my gallbladder was clear but I still had a fatty liver. I did another cleanse and started taking milk thistle. I'm due for another liver u/s soon.
