Have Pig Tongue/Heart Recipes/Ideas?

I have a pig heart and pig tongue as part of a pork share in my freezer, and I've never cooked or even seen these items before so I'm totally clueless! Are either especially nutritious? How would you cook them? Any great recipes??? TIA!

I have yet to delve into anything other than liver, but the first thing that comes to mind is chop and mix with meat for sausages?

I'd mince it or grind it and add it to ground pork and make sausage. If you have some bulk sausage, you could likely hide it in that, too, but you might have to adjust the seasonings a little.

I think chorizo is traditionally made with the heart and tongue.
