My kids ate pate! Now what about beef liver?

I was so excited this afternoon. I made the 'easy pate' recipe on my website yesterday, fully expecting the kids wouldn't touch it at all. I was sick yesterday with a lot of nausea, so it was a major labor of love to have to deal with making it. I was pretty sick and exhausted by the time I got it done, so I put it in the fridge overnight. I went and crawled into my chair and crahsed instead of trying to feed them something involving dip.

So I pulled it out for lunch this afternoon, and my kids LOVED IT. They liked it so much they were double-dipping their crackers! They ate 2 cups of pate, with only half a box of Mary's Gone Crackers crackers. That's pretty major, considering those two can down a box of those crackers in one sitting, they like it so much.

It absolutely made my day. I walked on a cloud all afternoon. Liver was my last hold-out in the traditional foods world, and now we've had success in getting the kids to eat it!

Now to figure out how to get beef liver in them and I will be a supremely happy mamma! Any suggestions?

My kids eat chopped liver with butter and bread. Yummo! I've never made it out of beef liver though.

My mom growing up always made us chicken livers, greek style. Should work with beef too. Dipped in flour, pan fried in butter, garlic , lemon and salt, and we used to eat them up. They are sooo good. Getting my hubby to eat them is another story.

Yes, it was made out of chicken liver. http://cookingnt.blogspot.com/2006/05/easy-pate.html It also has bacon and mushrooms in it.

Can you give me an idea of measurements or proportions for the greek liver? I'm willing to try that.

KerryAnn...try making the pate with beef liver instead of chicken liver. I've made pate with chicken, beef or pork and all three ways my ds has just LOVED it! He licks the pate right off the cracker and asks for more pate!

Great! That's a new one for me- I didn't reaize you could make pate with any type of liver.

Is the texture and consistency about the same with the beef as with the chicken?

I dont know about measurements, just have a mixture of flour salt and pepper, dip the liver in till they are completly covered in flour and pan fry in lots of butter add more salt and lemon at the end, and sometimes oregano. Very simple, but very yummy.
