HELP birthdaycake-milk/soy/wheat/gluten free

and avoiding eggs too! i have used applesauce instead of eggs with pancakes.

my son is one today and tomorrow a few people decided they were coming last minute. it would be nice to have a little cake for him. any recipes?

Can you do oats? I know that the oat protein structure is so similar to gluten that some people can't do it, but if you can, I have an oatmeal raisin cookie cake recipe (gluten, egg, dairy soy free) that is pretty decent.

we are avoiding oats as they are usually cross contaminated with wheat

I do have an apple cake made with rice flour that I will look up and post later today.

I made one for Nitara but she was too sick to eat it and later found out she was allergic to rice. Basically I cubed some apples, sprinkled some puffed rice on the bottom of the glass dish, put in the apples, a little water, some sugar. Then I baked it and about halfway through I sprinkled more puffed rice on top to soak into the juice and bake crisp. It was yummy!

usamomma-if i look for the rice, is it called "puffed rice"? sorry i dont know much about cooking, im learning a lot now.

I was going to do this one for Ben's 1st bday, but right before found out he is allergic to rice. If you haven't had cake in awhile, you will probably like it, I did, but I wouldn't serve it to your guests who are used to wheat, although my husband thought it was okay.


5 med apples
2 sticks butter ( I used 1 cup of spectrum shortening)
1 c brown sugar
2/3 c sugar
4 eggs or I used 1/2 c applesauce
2 2/3 c rice flour
1 tbls baking powder
1 tsp cinnamon
1/2 tsp ground ginger
1 1/2 c raisins ( I omitted these)

Coursely grate the apples and set aside ( I peeled them first) Cream together butter and sugars. Add dry ingred. Stir in apples and raisins.

Pour into a parchament lined 13x9 baking pan. Bake at 350 for 35 min. Set aside to cool. Invert the cake onto a baking sheet and remove paper. There is a carmeal topping recipe that goes with this, but it has condensed milk in it. I just made frosting with spec. shortening, powdered sugar and a little coconut milk or rice milk.

Basically rice krispies, but if you get them at a whole foods type store they won't have any artifical things added to them. If you bake this right, the top layer will be crisp enough to hold candles. Good luck!

I have a friend with an older child with similar allergies. They do a "sorbet cake" every year. Similar to an ice cream cake, but obviously made with dairy/soy/egg free sorbet. They just melt it a little to soften it, maybe mix in some favorite fruits, then put it into a (greased? I'm not sure) cake tin, freeze it until it's hard and then add some simple icing.

At their son's birthday party (it's their daughter with the allergies) they serve both kinds of cake -- regular and sorbet. Most of the adults like the sorbet one better! Most of the kids just eat the icing anyway.

I'm not sure if Cherry brook is free of all those things, but Namaste might have a mix that is. You can also check the allergygrocer.com.

Bake a wacky cake with your favorite gluten-free flour blend (usually 2/3 flour, 1/3 starch, plus some xanthan gum). You can google wacky cake recipes and GF flour blends.
