Sure! When I get a chance to make them (we had "lunch" verylate so dinner isn't even on our minds yet) I'll write it all out. Being as it is so late we may end up doing something else since they do take a bit of time prep wise.

UUMom this isn't an omni thread. I think where you got confused was a few of us have omni visitors over so we are doing omni friendly recipes. I haven't seen any meat meals, just references to omni folk.

No worries! I saw you mentioned you were confused by the thread and realized that both I and another poster had mentioned omni things so just scrolling through could prove confusing.

We ended up having egg salad sandwhiches. I use thyme, dill, and celery seasonings when I mix it up (along with my basic salt and pepper). I normally add garlic and tomato but didn't feel like chopping any up so they were lacking this time around. It was still tasty though!

Dd and I had long grain brown rice with soy sauce, spinach, onions, and carrots on top. For a side dish we had tomatoes stuffed with cucumbers, tomato pulp, garlic, and avocado. It was super good!

I made the New Farm Mac and Cheese but totally took out most of the fat content. I never liked mac and cheese as an omni but this vegan version is the bomb!! YUMMMMMOOOO!!! (sorry I'm feeling very enthusiastic about it right now, do you think it would be okay to eat the same meal every night for the rest of my life?!?!)

Deep South Brown Rice and Beans

2 cups cooked brown rice
1 can drained and rinsed kidney beans
1 green bell pepper, deseeded and chopped
1 red bell pepper, deseeded and chopped
1 onion, chopped
2 small tomatoes, deseeded and chopped
1 tsp basil (can use fresh but i never have. add 1 to 2 tbs of fresh)
1 tsp thyme (ditto to the fresh)
1/8 tsp cayenne pepper or just to taste. (i think my cayenne is really strong because more than 1/8 tsp KILLS us!)
2 tsp salt
4 tsp extra virgin olive oil (or another oil)
optional- 1 deseeded and finely chopped jalapeño for an extra kick

**put the rice on to cook while you get the beans and veggies ready.
heat up the 4 tbs oil with the 2 tsp salt, add the onion and bell pepper with the herbs. cook until al dente then stir in the beans and tomatoes. cook for another 2 or 3 minutes before stirring in the rice. cook until fully mixed together and heated throughly.

i find this needs extra salt and tastes yummy with steamed caluliflower or yellow squash. we had it with corn bread the other day and it was great.

pumpkin seed-encrusted lentil patties
& chipotle baked yams

...both from Vive le Vegan! by Dreena Burton.

The yams are done, and now I'm just waiting for the patty mix to firm up in the fridge before cooking.

Congrats on your first home, caiesmommy!

We did take-out too tonight; a whole bunch of yummy stuff from our favourite vegetarian restaurant in China Town. None too healthy, but oh so good.... spicy singapore noodles, mild szechuan-style noodles for the kids, sweet & sour "chicken" and ginger "beef". They use seitan and I only wish they'd offer cooking classes. Mine never turns out this good!

Tonight it was potato salad w/ tomato slices on the side. It was hot here so I did it a bit early, and it was the perfect light but still satisfying meal.

Tonight was Vegan Planet, Tahini Rotini with Broccoli and Lemon and I added some pan fried seitan bits to it. Yummo

Oh and Peanut Butter Banana Cupcakes with Chocolate Buttercream Frosting for dessert

Last night we had falafel - new recipe and they didn't fall apart for once! mmmm - oneo f my favourite meals. Today is Friday, so it is pizza night - spinach, tomatoes, garlic, and roasted red peppers are our favourite toppings these days.

Amy's Garden burgers with sliced tomato on the side sprinkled with salt, pepper and olive oil, w/ a giant red leaf salad with chickpeas and avo. We went to a school play last night, and it had to be fast!

Oh yum. You reminded me just now that I forgot to soak my chickpeas last night. I soooooooooooooo wanted to try out this new falafel recipe that I snagged, and I suppose it'll be tomorrow night now.
