MMMmmmmMexican...so simple, yet so satisfying!

whole wheat tortillas
crumbles + taco seasoning
avocado
lettuce
onion
tomato
cilantro
sour cream
cheese
black beans
spanish rice
corn

Combine in any way that makes you happy.... I'm surrounded by boys, so I just put everything on the table in bowls and let them fix their own before they migrate to the living room to watch wrestling. (I'm so pathetic...following the "if you can't beat 'em, join 'em" philosophy, I now sit in the living room and knit on Mondays and Fridays, during WWE.)

And tomorrow, we're having basically the same thing (minus lettuce, plus broccoli) on top of baked potatoes. My (ancient) wall oven has a timer, so I can stick the potatoes in before we leave for church and nuke everything else when we get back. So basic, but one of my favorite meals.

It's Friday- Trader Joe's Roasted Garlic Veggie Pizza, salad with lf parmesean ranch dressing, diet root beer and ice cream. Crap food, but easy and yummy.

Totally lazed out with some leftover chickpea salad and a bowl of cereal. : Oh well, it was just the girls and I and we liked it.

Tonight = Goddess pasta

Whole wheat noodles, fresh vegetables (zucchini and arugula from the garden), sundried tomatoes, garlic, fresh oregano, basil, thyme, rosemary, fennel, olive oil, balsamic vinegar, toasted pine nuts and goat cheese.

Raspberry sorbet for dessert.

Not sure about tonight since we've been at a fair for most of the day. last night we had the stuffed bell peppers. Since someone asked here is the recipe I used:

2 cups green lentils
2 cups brown basmati
peas
carrots-chopped
radishes-chopped
onion--chopped
garlic-chopped
salt
pepper
thyme
dill weed
Italian dressing
Mozzerella cheese
Parsely- chopped (if fresh....dried is fine as well)

Cook lentils and rice. Set aside. Cook peas, chopped carrots, chopped radishes, parsely, chopped onion, and chopped garlic together until carrots and radishes are tender (not soft).

Combine lentils, veggie mixture, and rice in bowl. Add in seasonings and mix. Add in Italian dressing and mix well. Cut open bell peppers and clean out. Spoon in mixture. Cook for 15-20 minutes at 350. Add slices of mozzerella cheese to the tops last 5 minutes.

Now those measurements are not the best. I make my lentils in 2 cup increments since I can get two or three meals out of that much. I also didn't use all the rice. Basically it's make as much as you'll need. I made three last night (I used orange and yellow peppers) and have TONS of mix left over. I also used full peppers. I know some recipes use half of one to make eating it easier I suppose but this worked fine. We just put the bell pepper in a coffee cup and it held it up nicely. Oh yeah, the recipe I referenced for oven temp. and cook time mentioned boiling the peppers for a couple minutes before hand. I have NEVER done that but after talking to my sister think that this is a good thing. Hers always turn out too soft for their liking. The ones we had last night we softer but still crisp.

Some recent meals:
* grilled vegetables and marinated tofu (on the grill)
* grilled vegetable frittata (we always make extra veggies on the grill for use in something else the next day)
* gratin potatoes and cauliflower served with lentil soup
* the veggie smorgasbord: fresh peas steamed lightly, fava beans with garlic and lemon, sweet potato oven fries, new potatoes with parsley, all served with some marinated tofu slabs
* potato-caramelized onion tart

Can someone post a recipe for shake and bake tofu? It sounds delicious!

We're having the sauteed chard with carmelized garlic and feta cheese again, but I think quinoa and fava beans instead of polenta tonight.

Last night: Falafel. Honestly, it was one of the best I've ever had - as good/almost as good as many that I've tried at authentic shops. Yum, yum, yum.

Tonight: grilled portobello mushroom "burgers" and a big green salad with red wine vinaigrette.

mmmm we had falafel for lunch (fantastic brand) so good but my toddler would only eat the falafel and the tomatoes, not the pita or the lettuce. I guess 2 out of 4 isn't too bad

We had refried bean burritos for dinner tonight(anyone got an idea for a half a can of refried beans..and a half can of tomatoes lol left over)

ds and I had hummus wraps for lunch and he loves it so much he had it for dinner too!(hes 9 months and would drink hummus if he could lol)

OMG! We just had the best little sandwhiches!

There is a EuroAmerican joint near by and DH has had lunch there before and wanted to get dinner so off we went. We both had the "Athens" one...panini filled with grilled red pepper and smothered in feta and avocado. I have never had such a delicious sandwhich! When I say smothered I mean it was layered on thick! Our bread was sliding around because it couldn't get a grip on the pepper. I want another one.

We also had greek salad.

Ooooh, yuuum. I love anything with avocado-those DO sound tasty!

Dh was gone all day and night so we were lazy...ds and I had bean burritos and spanish rice with big old chunks of fresh garden tomaters..YUM.

That sandwich sounds so gooooood! I want one.

We did this super-easy thing where we bake potatoes and pile lots of reheated leftovers on them. I didn't have big bakers, so I just baked 2 small potatoes for each of us, and we piled them with:

broccoli
black beans
avocado
green onion
and a little butter/cheese/sour cream, underneath all that healthy stuff

It was tasty and filling and we cleaned out the fridge, so I'm happy.

Nope, we had hummus, cheese and carrot sandwiches brought to us by a friend after an 8 hour stint in the ER and a CT scan for an impressive bump on K's head. (she's ok).

I have no idea what were having tonight..I have a half can of refriedbeans and tomato sauce to use....but no idea what to make(we had buritos last nihgt and this stuff is left over)...but im just fresh from the dentist and got a root canal so im in no mood for anything at all hard..so maybe gazpacho or miso soup....who knows...but we have to be at the house were buying at 7 to meet an electrician so itll have to be quick
