A new "What's for dinner?" thread! - Page 9

2 1/8 cups dried garbanzo beans (absolutely not canned)

9. Deep fry in oil at medium high heat until golden brown.
10. Serve piping hot (these can be made ahead and frozen

Two questions...(blonde questions lol)

1) why not canned? I think I have dry but I know I have canned

2) I dont have a deep fryer...I dont deep fry anything I have no idea how! Can I just fry them in a bit of oil...just like I would tofu or should I drench them in oil..like french fries would be done?...OR could I even maybe bake them?

Se blonde questions but anybodys imput would be great!

My best guesses....

1. Well, I suppose the uncooked chickpeas offer a different texture? Also, there would be significantly less moisture - therefore, need less additional ingredients to bind? I do know the texture is quite unlike that of any falafel I've ever made at home before, and very close (if not identical) to those I've had in traditional middle eastern restaurants.

2. I didn't deep fry mine. I put a bit of olive oil in a skillet and pan-fried them. I didn't use all that much, but did spray the tops with more olive oil before turning them, etc.

Thank you so much for the falafel recipe!!! I am sitting here at midnight drooling over it. Can't wait to go shopping and make them tomorrow.

Oh and I revised my dinner. We wound up with lentils, basmati rice, sauteed onions, garlic and red pepper. It was easy and created less dirty dishes (the worst part about cooking...). I also baked some bread and ate like half a loaf smothered in butter. Good but gross.

Breakfast-for-dinner is a party around here, I swear.

we had a yummy tofu dinner!
I marinated the tofu in garlic, ginger, onion, crushed corriander, chili flakes, masala, cumin, soy sauce, lemon juice, and lemon rind, cilantro and thai basil...i think thats all i did..lol,
then I drained the marinade(saved it) and fried the tofu in sesame oil,
then removed and fried carrots, mushrooms, peppers, removed that, and then poured the marinade back in and added almond milk slowly and had it thicken then I added the tofu and veg mixed it all together and served it over rice...with a green salad on the side

basically grabbed whatever spices we love lol

It was AWSOME..dp walked in saying the house smelled great lol

ZUCCHINI PANCAKES!!!!

Steamed carrot coins with butter, sugar and lemon and a tossed green salad. The carrots, zucchini and salad were all out of the garden.

SO SO glad I'm not alone in the whole breakfast for dinner thing. I just can't handle breakfast for breakfast but these are SO yummy I have to eat them SOME time!

Enchilada casserole...or should I say chili casserole since I'm using the leftover chili from last night?

Layer corn tortillas, sauce and beans (or leftover chili!) and cheese in the crockpot and cook on low all day.

Oooh, we do breakfast for dinner a lot! It's one of ds's favorites and he is hard to please!

Earlier this week we had little personal size "frittatas"...I let ds pick what he wanted in his-tomatoes & cheese, a little blah.

I throw everything but the kitchen sink in mine!

...now I'm dreaming about pancakes and "sausage."

I made a lentil curry and an eggplant/cauliflower curry with brown basmati rice and whole wheat pitas. Homemade chai with light coconut milk to drink. Oh man, was it the most amazing dinner.

We had sweet & sour seitan, steamed rice and broccoli.

Tonight I'm planning to make an Indian feast and we're having company for dinner - bharta, garlic naan, homemade chutney (wish me luck!), curry-fennel roasted cauliflower and tofu and rice. I've also got some really nice spinach that I may try to see if I can find a recipe for.

I just made some pizza (homemade crust, mozzerella cheese, jarred sauce) and am waiting (anxiously) for it to bake. I'm going to steam some broccoli, carrots, and cauliflower to go with.
