We're bankrupt today so I can't go shopping. I do have some spinach though and rice and beans so I'm thinking Lolo's Lemon Tahini Rice and Beans mmmm. Last night was Millet and spinach polenta from Vegan with a Vengeance with a split pea pattie and steamed spinach (yes, am on a spinach bender it would appear) and the night before that I had Lemon Millet Winter Casserole (cause it's freezing in Aus at the moment!)

As for sweet potato recipes, bring them on!! I ADORE sweet potato!!

ETA: I make my own seitan from a PPK recipe which involves wrapping it in foil and baking it. I had disaster after disaster with trying to simmer it, it always just tasted like glue to me, but baking it is super yummy!! http://www.postpunkkitchen.com/forum...c.php?id=15959

You know, I've been thinking about making that "Seitan O'Greatness." It's popped up on every food blog I read. Well, one more day 'til school's out...I can experiment this summer. I've been making the Faux Chicken seitan from La Dolce Vegan...we've really enjoyed that.

We had such a simple dinner tonight...I was so exhausted, thank God I had cooked food in the fridge...some anasazi beans I made this weekend (why are these so tasty?), kale, and the last of a loaf of oatmeal bread I made on Sunday, turned into thick garlic toast. DH and DS had some cottage cheese with this, as well. I beans and greens!

It's really good! I've made a few different flavourings (have a bad stomach and that one's a bit spicy for me) and all of them have come out wonderfully.

I had a change of plans. I'm having Eggplant Pancakes Florentine from the fat free vegan blog.

Add lentils to the remaining onions/mushrooms in the skillet. Toss in 1 C of rice and 3 C water. Herbs/seasonings also added at this point. Bring to a boil and cook, uncovered, 20-30 minutes (I find it takes closer to 20). Remove from heat, cover, and let sit another 10-15 minutes.

In a second, small skillet - heat remaining T of oil. Caramelize the reserved 1/2 of the onion/mushroom mixture.

Place rice/lentils in serving dish and top with caramelized onion/mushroom mixture.
I made this last night but used brown rice instead so I didn't pre-cook the lentils at all, just threw them in with the rice and the sauteed stuff, spices and the water and cooked it all for 45 minutes. Worked out great! I think next time I might try a mixture of brown and wild rice. Thanks for the recipe!

Errr I'm having pumpkin waffles from VwaV ::: They have PUMPKIN therefore are a healthy dinner right? Mmmmm the batter smells awesome.

We're at a SciFi con this weekend, so I had a bowl of instant-just-add-hot-water curry lentil soup from the bulk aisle at the co-op doctored up with a pinch more curry, garlic powder, 1/4 cup of dry ww couscous and a handful of raisins. And a salad.

Yum! One of my favourite pizza topping combinations is pineapple and hot peppers. Very, very complimentary.

Anything with pumpkin is healthy!

Tonight we're having homemade yukon gold baked fries, caper hummus, whole wheat pita bread, and salad.

Last night we had leftover restaurant vegan pizza and salad.

Tomorrow we'll be having Soy Garden tofu burgers on buns with more potatoes and greens.

(We can only use a toaster oven right now so our meal options are very limited.)

Pumpkin waffles were AWESOME!! They tasted just like the pumpkin muffins in VwaV. I had them with maple syrup and a slice of soy bacon (even though I'm not supposed to have soy I risked it and it was totally worth the risk. Problem is now I want it all the time!!)

Last night was another VwaV one, Fettucine Alfreda, I wasn't super keen on it. I halved the nut. yeast and it was still too much. I might try it again but next time I'll only use 1/4 of a cup. Plus I bought a cheaper nut. yeast thinking I'd save some money but it's :Puke

Tonight I'm thinking the kidney bean burgers with mint sauce I think I stole from the fat free vegan blog but I really can't remember where I pilfered the recipe from

Tonight we had takeout...i know horrible..I started cooking and dp decided he wanted chicken lol...luckily the Harveys is conected and I got a veggie burger, baked potato and salad...extra pickles and hotpeppers on my burger mmmm

Tonight is just lentil burgers. Making 2 cups of lentils lasts for 3-4 days for us. Instead of coming up with new recipes DH has been asking for the same stuff. Apparently they are tasty.

Speaking of lentils, the ones I jsut used up were crimson. The ones I just bought are green. DH says they taste totally different (I haven't made the green ones yet so have no clue). What are some good recipes for the green ones? We love the things I've been making with the crimson ones but DH says they taste different enough he's not sure you could substitute them.

Tonight was Garden Veggie Burgers and brown rice, with spinach from the garden mixed in. Plus salad with lettuce from our garden. No tomatoes yet, but I do see yellow tomato flowers. : Soon, soon.

i used some fresh rhubarb and scallions from my garden to make crunchy rhubarb-apple salad. OH MY GOSH was it good!!! so easy and so so so yummy!
