oh oh oh! can i request the stuffed bell pepper recipe?
sorry this took so long to get to you!
Deep South Brown Rice and Beans
2 cups cooked brown rice
1 can drained and rinsed kidney beans
1 green bell pepper, deseeded and chopped
1 red bell pepper, deseeded and chopped
1 onion, chopped
2 small tomatoes, deseeded and chopped
1 tsp basil (can use fresh but i never have. add 1 to 2 tbs of fresh)
1 tsp thyme (ditto to the fresh)
1/8 tsp cayenne pepper or just to taste. (i think my cayenne is really strong because more than 1/8 tsp KILLS us!)
2 tsp salt
4 tsp extra virgin olive oil (or another oil)
optional- 1 deseeded and finely chopped jalapeño for an extra kick
**put the rice on to cook while you get the beans and veggies ready.
heat up the 4 tbs oil with the 2 tsp salt, add the onion and bell pepper with the herbs. cook until al dente then stir in the beans and tomatoes. cook for another 2 or 3 minutes before stirring in the rice. cook until fully mixed together and heated throughly.
i find this needs extra salt and tastes yummy with steamed caluliflower or yellow squash. we had it with corn bread the other day and it was great.
