I've got my first batch of stock simmering away on the stove right now. I am trying to follow the instructions in NT. I started with the water just over the bones like it said. Am I supposed to add water to it to keep the water level over the bones, or just let it simmer down and leave the bones out in the air? I really appreciate the help. I'll probably have more questions as I get to the end since this is my first time making it.
