Quick stock question..thanks!

I've got my first batch of stock simmering away on the stove right now. I am trying to follow the instructions in NT. I started with the water just over the bones like it said. Am I supposed to add water to it to keep the water level over the bones, or just let it simmer down and leave the bones out in the air? I really appreciate the help. I'll probably have more questions as I get to the end since this is my first time making it.

oh yeah...do you just leave it simmering on the stove when you leave the house? we moved recently and this is my first itme with a gas stove so I'm still getting used to it and it makes me a little nervous. Thanks again!

I always add water to keep the bones covered- you can't extract anyting form them if they're not under the water. If you want concentrated stock, simmer it uncovered after you strain it to get it down to the volume that you want.

I don't leave mine on my stove because my husband isn't comfortable with it going when we're gone. I do my stock in the crockpot for that reason.

Thanks so much for your help! Do you simmer it down after you strain it or just leave it?

I think the crockpot is a good idea...I may have to give it a go next time. I was planning on doing it that way this time but mine doesn't have just an "on" button...it only has time settings and none of them are 72 hours..haha!

I normally simmer it down due to a lack of freezer space. I need as much freezer space as I can get.
