Pasta, Potato, or Rice Salad Challenge

I am looking for healthy (cold) pasta, potato or rice salad dishes that are also "frugal"...What is your favorite yummy dish?

Cold Couscous Salad


Just mix some cooked couscous (buy the couscous in bulk so it's really affordable) with olive oil and balsamic (or red wine) vinegar . . . or even a bottled Italian Dressing. Add chopped vegetables as you like; I use seeded, peeled cucumber, red pepper, cherry tomatoes and green onion. Then I throw in some feta cheese and calamata olives, salt and pepper.

Maybe ingredients like calamata olives and red peppers aren't exactly frugal, but if you can get a couple days' meals for under $10, that's not too bad. I could eat it every day.

two cups of cold but freshly cooked rice
one pack of fake crab meat
two boiled eggs, chopped
can of sweet corn (drained)
cuccamber, sweet onion, chopped
mayo, salt for your taste
mix togerer,

My mom has a really yummy cold couscous salad recipe. I'll get it from her. It has dried cranberries, sliced almonds, orange juice, celery.....not sure what else, but it's good! If I don't come back to this thread in a day or two just PM me for it.

two -3 quarts cherrytomatoes halved
2 lbs fresh mozarella cut into cubes
olive oil-1/2 cup, more to taste
kosher salt

add everything in a bowl
cook 1lb pasta ,cavatappi is my favorite,add hot pasta to the rest of the ingredients

add chopped fresh basil, serve immediately

leftovers are yummy

Thank you! I was reading this post looking for dinner inspiration and you hit it right on the nose. I didn't have couscous so used orzo, grilled/diced chicken, balsamic vinaigrette, feta, scallions, steamed broccoli, and reconstituted sun-dried tomatoes - oh, we had it over salad greens. YUM!

Any salad of this sort can be made healthier by substituting plain yogurt for mayo. I like it's taste better anyway.
