Cold Couscous Salad
Just mix some cooked couscous (buy the couscous in bulk so it's really affordable) with olive oil and balsamic (or red wine) vinegar . . . or even a bottled Italian Dressing. Add chopped vegetables as you like; I use seeded, peeled cucumber, red pepper, cherry tomatoes and green onion. Then I throw in some feta cheese and calamata olives, salt and pepper.
Maybe ingredients like calamata olives and red peppers aren't exactly frugal, but if you can get a couple days' meals for under $10, that's not too bad. I could eat it every day.
