Help! Swimming in Greens!

So, went the farmstand for a playdate with my friend who owns it and she sent me home with two whole bags of veggies.

But, I'm so out of ideas - I need some help.

Here's what's left:

2 heads lettuce
spinach
bok choy
2 big bags of baby broccoli
snap peas
scallions

We did have two things of spinach and another bag of broccoli that I've already used, but I can't figure out what to do with the rest of this stuff.

I'm going to the grocery today, so I'll be able to pick up some extras, if need be.

We've been drowning in greens here, too, between our CSA and my mom's garden.

I sauteed spinach and chard together last week as a side dish. It was really good. You could make a big salad out of the lettuce, with the scallions and snap peas in it. Top with mandarin oranges, chicken (or not), and some sort of Asian/ginger dressing.

Stir fry the broccoli and spinach and bok choy together. Put them in a thai curry. (Moosewood simple suppers has a great one. It is very flexible as to the ingredients. Cream of broccoli soup. Broccoli and/or spinach quiche. Omelets with spinach. Giada has a fabulous pasta with broccoli dish. It's simple, but fabulous. http://www.foodnetwork.com/food/reci..._33941,00.html

The broccoli, snap peas and spinach can be frozen if you need time to think

pasta primavera

i always steam or sautee my leftover veggies at the end of the week, add some olive oil, sea salt and herbs, lemon and mix with pasta for a great pasta primavera. some veggies work better than others for this, but it can't hurt to try some that aren't traditionaly italian as they may become your favorites...
