Ice cream without dairy?

DS2 has started a GF/CF diet. He loves ice cream, and it's always been one of the ways I've gotten protien and fat into him. But now I'm wondering how to go about that, since he can't have the dairy. Is coconut milk good for making ice cream? Does it taste super coconutty? Do I need to use something heavier in place of the cream?

Any experience and insight would be greatly appreciated!

Yep...coconut milk works great. I use 1 can of coconut milk, some maple syrup, vanilla, chunks of banana and pineapple...delish!

So do you just put everything in the ice cream maker? DD#1 is dairy sensitive and we've been getting sorbet for special occasions. But ice cream would be great!

Our DS can't have dairy. We were also GF for a while. For ice cream we use Tofutti. The cheesecake-flavored ones are awesome. Tofutti ice cream is not certified gluten free but many GF folks eat them. The regular ones contain flavor extracts that I believe were in grain alcohol at one time so that is why they won't say they are GF. The cheesecake ones also contain maltodextrin. When we were GF I contacted Tofutti about the status of their products and they were very open about the ingredients that some GF people would be concerned about.

If you are also staying away from soy, I was able to make an ice-cream type food with frozen bananas and other frozen fruits and some DariFree or other milk substitute - basically I pureed it to a smoothie consistency and then chilled it back to be a little thicker - so this is a way to make a frozen treat with no soy and without needing an ice cream maker.

Yep. We've got two versions we like, Coconut-Ginger with Raw Cacao Nibs and Coconut-Cacao with Raw Cacao Nibs. Both are In fact we've got a batch of Coconut Cacao churning up right now.

The coconut milk icecream sounds great and I'm going to give it a try. I miss ice cream. Where do you buy your coconut milk? I have a few cans of the Trader Joes (light), and a few a get at the grocery store (has a preservative), but ideally I'm hoping to find a better (bigger) source.

Here's what I do:

Take 1/2 cup frozen bananas and 1/2 cup frozen strawberries and place in food processor. Add 1 Tbsp milk (oat, raw, whatever) and a sprinkling of walnuts (option). Food process until a ball forms.

That's it!

It truly passes for ice cream, believe it or not. Everyone I tell is skeptical until they try it and then they love it :

OOOOH! that last ones sounds good and I am going to give it a try tomorrow...I have a ton of frozen bananas...

and yes, for the coconut milk icecream...just mix and pour into a icecream machine

in first bowl blend 1 can coconut milk , 4 egg yolks, about 1 cup honey, 2 tbs cocoa powder, in second bowl blen untill peaks form 4 egg whites. fold the whites into the other bowl. freeze. it is amazing.

When you say freeze, do you mean just the freezer or ice cream machine? I'm looking to buy one but doesn't have one yet.

The only good thing about Trader Joe's coc. milk is tht it doesn't have any gums added. Otherwise, it's a waste of $. You can get better coc. milk making it yourself. If you can handle the gums (most folks can) then Thai Kitchen is good - no preservatives. Or any you find at the hfs (don't get light, though - you're just paying for water).

I make ice cream with coc. milk. It's ! If you can tolerate the canned milk, it makes a nice creamy ice cream. If you have to make your own, you'll want make a custard before putting it in an ice cream maker. To use the canned milk, I use 1 can, a bunch of frozen fruit that's been chopped in the food processor, some raw egg yolks, some honey, and maybe some vanilla. I made some cherry recently, and you couldn't even taste the coconut. Even my BIL loved it, and he can eat regular ice cream and doesn't care for coconut (he camme to the wrong house then ). A person I know made chocolate, and she swears you'd never know it was made with coc. milk. Go ahead and experiment and see what flavors you like.

Oh, and an ice cream maker is sooo worth it if you like ice cream!

I also make chocolate. I add cocao powder instead of strawberries with the bananas. I just make sure my bananas aren't ripe, and you can't taste the banana through the chocolate

This is amazing and so fast!! I've been adding a pastured egg yolk for the nutrients and freezing any extra (there's not much!) in our popsicle mold. The popsicles are delicious, but soft - we're trying to freeze it in a tub and see how that works.

Thank you so much for sharing! I'll have to try the chocolate (chocolate banana doesn't sound too bad if it happens ).

Costco is selling a cuisinart ice cream maker for $50. We are also debating if we should get one. Imagine... RAW MILK ICE CREAM....
