I found kimchi at...

Walmart, of all places :. It's Melissa brand and a real, live fermenting kimchi. It has a warning on the lid to open carefully with a towel as the contents are under pressure. No joke! It hissed and oozed all over the place. I've never had real kimchi before and haven't gotten around to making any (my pickles weren't so hot) but this stuff is delish. The ingredients are: nappa cabbage, radish, red pepper, onion, garlic, salt, sugar, sweet rice flour, anchovies and shrimp. Does anyone make any similar to this? I'm going to have to start making my own because it could become an expensive habit.

I make it with those ingredients except I don't put in anchovies or shrimp (yuck). My MIL makes hers with shrimp sometimes. Most times, the only ingredients I use are rice flour, red pepper, ginger, salt, sugar, green onion or watercress and sometimes sesame seeds.

I was a little leery of the shimp and anchovy but I really like it. It gives a subtle hint of fresh seafood. Sounded questionable to me but it works. Who would have guessed?
