And, to balance that, we often eat cheaper stuff.
refried beans (50 cents--I use dried beans, cook int he crock pot, then refry them)
cheese (1/2 of an 8 oz block at $1.49 per block, so 75 cents)
tortillas (around $1, but I can make them for cheaper)
salsa (1/2 of a jar at $1.99/jar, so $1)
sour cream (maybe 1/4 container at $1 each, so 25 cents)
So, that's $3.50 for 4 servings as well. And actually, I can salsa in the summer, so my cost on that is lower.
Beans and rice (one of our favorites)
Hot rice (??Less than 50 cents for a pot)
Beans (50 cents for 1/2 lb)
Onion (50 cents)
So, that's $1.50. We will eat these plain, but sometimes we add cornbread or salsa and cheese or just hot sauce. You can use black beans, blackeyed peas, pinto beans, kidney beans (not my fave), or any other type beans. If you cook these early in the day, you can mix the rice, beans, cut up onion, and a jalapeno (we like hot stuff
) with a vinagrette, and you have a cold salad that is tasty.
