If you all have had lunch, you must be in the east! We just finished breakfast a little bit ago.

So here's our day today:
DS and I got up at 8. Shower and bath until about 9.
Today was an easy breakfast, just leftover hot cereal reheated with milk and coffee for me, of course. While DS ate breakfast (I can't eat first thing usually), I put some brown rice, mung beans, and red lentils in the rice cooker and started it. Our rice cooker takes forever to make brown rice, so starting it early means it will be ready when I need it for dinner prep.

We're having stuffed peppers for dinner tonight. I'll fill them with the rice mixture, a little tomato sauce, and some cheese. I have tomato sauce in the freezer, but I need to run to the store for cheese. We also need some other things, so we definitely need to go this afternoon.

I want to put some sauteed onions in the peppers as well, so I'll cook those either after lunch or while DS is finishing eating. I'll make extra so I can use the rest in something else tomorrow.

I should also put out some no-knead bread for tomorrow. I haven't tried it yet, but I've been wanting to.

Yep, we are on EST here in Ohio.

While the kids were sleeping I got the veggies done. I'm going to put some bread together later this afternoon, so the baking time will be right for tomorrow.

Definitely try the no knead bread, it is wonderful and so easy.

We spend alot of time in our small kitchen. I WOH but about two nights per week I'll basically spend most of the evening there.

Over a week, I normally make granola, yogurt, yogurt cheese, ww bread, some other quick bread (focaccia, banana bread) and some sweet stuff (we've been eating alot of rhubarb crisps while it's in season, in the winter, I'd be making fudge, squares, cake, pie, etc).

In the evening, I spend 15-30 minutes getting my lunch ready for the next day.

My dh makes our dd's lunch and most of the everyday cooking. He cooks breakfast for himself and the kids (I'm already gone), stuff like fried egg and cheese sandwich, pancakes, etc. He'll do supper prep throughout the day and cooks dinner most nights. He also does all the dishes and clean up. I normally put the dishes away.

It works well and I think either of us would go crazy if we had to do it all. It doesn't feel so bad since it's split up between us.

Breakfast: 10 mins (nuke oatmeal)
Dishes: 1 hour every 2 days

Lunch: 10 mins (leftovers or quick food like eggs or peanut butter)

Dinner: 30 mins to 1 hour

Baking: Once a week or so, 1-2 hours.

We still don't eat much convenience food. I don't make my own bread or pasta and we have the odd prepared sauce, but compared to most people I know IRL we eat very little convenience food. We are bad for frozen veggies though...I heart frozen veggies for quick dinners.

We eat a lot of quick dinners - steamed veggies and tempeh/tofu over rice/quinoa/noodles, lentils and steamed spinach/lettuce over rice/potatoes, beans and Mexican style rice, stir fry, etc. If I'm ambitious, I bake, make my own stock, or do beans or a whole chicken.

I hate cooking every day but we have no $$ and DH doesn't cook much, so there's no choice. I would eat way more convenience food if we could afford it. I'm just lazy that way.

I love to cook, but the one luxury we do permit ourselves is eating out on a regular basis. There's just so much fantastic food in Seattle, and it's often local/organic/etc! It's not always planned, though, so I've found if I get too far ahead of myself food goes bad. I try to plan 4 days of meals ahead of time. Then if it takes us longer things still shouldn't be wasted. I have some standbys, but I'm usually trying new things I've seen on food blogs and in Everyday Food. Lately I've really gotten into a side dish rut. I make a nice entree and then just steam some frozen veggies or reheat a can of green beans. I make twice as much as we need of eveything so that we can have the leftovers for lunch. Every few days I make a huge pot of steel cut oats and then freeze it in individual servings to be reheated (dh often has to tak breakfast to work) We rarely eat bread, but if we do I make it. I want to start making our own tortillas, since we eat those a lot more, but I just haven't looked up their super easy instructions yet. I really hope to have a garden in our next house so I can use more home grown ingredients, but until then the farmer's market is great.
