I don't know about the scrambled egg part. I'm making a breakfast casserole this week. I don't have an exact recipe but I wisk some eggs with some milk, some spices, add some cooked mushrooms, some uncooked shredded potatoe, some cheese, some bread, green peppers, onion, anything you have. I let the mixture sit overnight (or for a few hours) and then bake it up. It is really good and excellent for leftovers. We often use it in tortillas.
You could also hard boil them and make a cesear salad with the eggs as the protein in the salad.
Omlettes and frittattas are yummy.
