We're going to be doing some traveling in July and I need to come up with some non-messy snack ideas for DD. She is intolerant/allergic to dairy, wheat, eggs, nuts, and coconut. She cannot have bananas, either, as they make her rather hyper. I made her some crunchy garbanzos and she loved them (so did I) , but I think she's allergic to them, to:

My boys are free of all those except I do eggs once in a while (less than once a week). Do you want to homemake it or buy it? I'm assuming you want to perhaps make it yourself since you are posting in traditional foods (I find baking gluten free impossible in terms of traditional foods...) If you find a good gluten casein free cookie recipe you are comfortable with you can sub in an egg replacer for the egg and you would have something that met your requirements. (I would share our cookie recipe but I made it up and honestly there are probably better recipes out there.) Other not extremely messy car snacks are some fruits like apples or cut up grapes. Dried fruit if you are comfortable with that--my boys don't digest it well. I also bring dairy free smoothies as a drink can be a meal actually (I can get lots of protein and fat in a drink with a really good blender). Drinks on the road are musts for us for the really long trips. Pieces of meat. Avocado is high calorie and healthy but a bit messy (we do it).

For purchased items if you are comfortable with that for trips cereal can be messy but easily swept up. My boys eat rice crunch ems in the car and those don't have your allergens--there are actually lots of gluten free cereals that meet your allergens though you may not be comfortable with that and I wasn't either until we ran into metabolic problems and needed more carbs. You can use the rice crunch ems to make a more high calorie treat using ghee or another cooking oil, a bit of maple syrup or a spicier ingredient and baking them--sort of like chex mix but with only the cereal. Again outside of traditional foods I've recently discovered no nuttin granola bars and granola which you order online from a Canadian company. Completely allergen free (does have certified gluten free oats) and really, really good. The boys favorite are the chocolate chip and that isn't good for travel (too messsy) but the apple would be as would the granola pieces (it has cinnamon and vanilla flavor). A lot of their stuff outside of chocolate chip and the raisin have cinnamon and one of my guys has a cinnamon allergy but the other loves them all. I've never tried them but kirkman labs have things like 100% pear bars (I bet stuff like that is available elsewhere too). Oh there is a type of bread you can use to make crackers that would be good I think it is called chebe bread. It is very limited in ingredients (sorghum flour I think). I've not done it yet but plan to. I've never done this either but Tinkyada has really good rice pasta--you could make plain old rice pasta and it wouldn't be exremely messy again though that is outside of traditional foods.
When you are talking about this many allergens you do have to think outside the box and you may not find the perfectly neat/healthy/traditional foods snack but you should be able to do ok for a car trip. We have done really long (16+ hour) car trips with these allergens and more.
