Aged kefir cheeses

I was reading Dom's page about making all kinds of cheeses from kefir, and the aged cheeses particularly intrigued me. You dip them in melted beeswax so they can age for several months. MMMMMMMMmmmmmmmmmm!! Has anyone tried this and how did it turn out?

Sounds great! I'm still in the cream cheese phase for making cheese with kefir, though. This gives me something to work towards.

since i just reacted to raw milk sharp cheddar, i'm thinking i may need to try these when ds is just a little older and less demanding of all my attention.

I'm curious too. I tried making the cream cheese/whey recipe from NT, and the whey turned out fine but the cream cheese got a weird orange mold all over it within two days of being refrigerated (after the whey was separated). Anyone else have this happen? Did I do something wrong?

Sounds kind of like the yellowish crust that Dom mentions on his site. But then again, weird orange mold doesn't sound too edible either
