Before reading through all your post the first one that popped into my mind was Vivian Rose or Vivian Rosetta ... then I saw that Rose was one of them you had been thinking about.
It's hard to name your baby and I wish you luck hehe. Just settle on what seems right. Originally our little bunny was supposed to be Andrew Jaymz but it never sat with me. I heard the name Aizen and fell in love with it. So, he's my little Aizen Jaymz. You'll know when it feels right!!

I really like the flow of Irene with Vivian, but I think your reasons for not using this name are perfectly valid! I agree with your DH that Elizabeth is too many syllables with Vivian to flow as nicely.
What about something like Lorene, which preserves the sound and flow, without being perceived as a tribute by a yucky relative? (Lorene just also happens to be my mom and Grandma's middle name lol).
A few other similar names off the top of my head:

I don't think you should use Irene if it gives you the hebbi jebbies. Funny thing- MY grandmother is an Irene, she raised 7 boys, and one of them sounds A LOT like your grandfather.
