Help with Birthday Cake Recipe

I need some help from fellow mammas of children with multiple allergies. My daughter has her 6th birthday coming up, and I need a recipe for a cake without dairy, corn, egg, soy, cane sugar and made with rice flour - no wheat, rye, etc.

Babycakesnyc makes cakes and cupcakes that would be okay, but their shipping cost is so high. I'm great at baking but have been so afraid to experiment with recipes for a cake. I know we can use agave nectar, honey or maple syrup as a sweetner. I'm just not sure how to substitute for so many things.

White Cake
½ C Spectrum shortening or 1/3 C oil
1 C honey, agave or rice syrup
2 tsp vanilla
1 ½ C brown rice flour
1 C tapioca starch
½ c arrowroot starch
1/3 sorghum flour
½ tsp salt
1 tsp xanthan gum
3 tsp baking powder or
2 tsp cream of tartar + 1 tsp baking soda
1 C water

Cream together shortening, syrup and vanilla until creamy. Sift together flours, salt, gum, and baking powder. Add to creamed sugar mixture alternating with water. Mix until smooth. Pour batter into a greased and floured 9x13 pan or 2 9” round pans. Bake at 350F for 20-35 minutes. Less for small pan, more for larger pan.

Frosting
Mix fairly equal parts Spectrum shortening or cool coconut oil with your syrup sweetener of choice--we really like rice syrup. Whip by hand. Add berry juice or cocoa powder and spread on cake. If you use coconut oil, it is important that the cake be cool and the whole thing be stored in the fridge if it's hot out. Otherwise you get a runny mess.

Thank you so much! She is allergic to sorghum and amaranth too. Can I substitute something else for the sorghum flour?

This is the closest recipe we've come to that we could actually try :-)

Replace away! Just be aware that sorghum absorbs a lot of moisture, so you may have to increase the amount of whatever you use in it's place. You could just do rice flour.

We avoid wheat, diary, eggs, chocolate, tomatoes and apples. The following is a recipe we adapted with much success. And it tastes great!

2 1/4 c flour (we use spelt in place of wheat)
3/4 tsp salt
1 1/2 c sugar (we use cane sugar but have hear of others using maple syrup or honey with success)
1 1/2 tsp baking soda
1 1/2 tsp vanilla
1/2 c cocoa (we omit the cocoa and instead use 1 tbsp vanilla)
1 1/2 c water
1/2 c oil
1 1/2 tsp vinegar

There is a magazine I buy from time to time called 'Living Without' which routinely has gluten/wheat free flour mixture recipes that can be used in place of wheat flour. You might be able to find the flour recipe on www.livingwithout.com
