Summer Recipe Wraps

I know there have been alot of discussions on food but hey when your pregnant sometimes that is all you think about Anyway now that summer is here Alls I can think about is fresh fruit and veggies I have been hungry all the time for wraps and think I eat them everyday for lunch and dinner and even breakfast sometimes. So I thought it would be fun to list a fun wrap recipe (can be sweet too). Since I have been eating them all the time I come up with new recipes all the time. I think my favorite one though is turkey/chicken wrap- you start w/ spreading mayo and fresh garlic on it then top it w/ olive bruschetta then you can use chicken or turkey(heated if deli) and smother it w/ provolone or swiss cheese and top it off w/ tomatoe,lettuce,onion and whatever else sounds good to you I made an asian chicken wrap last night and DH loved it. They are simple and good for you and baby to eat Just thought I'd share.

Yum! I've been eating a lot of wraps lately too. Last night I cooked black beans, zucchini, yellow squash, garlic, and onions in a pan, then mixed it together with rice, and rolled it up in a tortilla. Then I baked them in the oven with cheese on top, but that part could easily be skipped. So yummy and so easy!

I'll eat pretty much anything if you throw it in a tortilla. Seriously!

My fave is lots of yummy salad greens (I like the prebagged variety from Earthbound Organics that has herbs--cilantro, dill, and basil, I think), some variety of cheese....feta esp. but whatever is on hand, and grilled (leftover) salmon. I put the fish on cold, just flake it with a fork, or leave it in largeish chunks. When we grill it, we usually season it with olive oil, garlic, lemon pepper and dill weed. I like a bit of a sweet raspberry viniagrette (Newman's own is yummy!) on top of it all.

Oh, and sometimes I spread cream cheese on the tortilla before adding the rest. Yum-o!
