Anyone want to share their "diabetic" meal plans?

I was diagnosed with PCOS and insulin resistance 4 years ago, and between having two kids and nursing for 3.5 years, I've neglected my own health. My blood sugar is showing that now, and I have to get serious. I'd love to see meal plans for anyone who is following a diabetic or low carb diet, just to get back in the swing of things.... esp anyone on a budget LOL... I have about $150 for a family of four for two weeks and both boys are huge eaters.

I have PCOS also and what I cook and freeze a lot of is meat because it is what I can eat without gaining weight and having high blood sugars. In the winter I roast beef, pork ,chicken or turkey; depending what is on sale. then I thin slice it with my electric knife and package it in 1 serving sizes. In the summer I barbecue chicken pieces and hamburger patties and freeze them on a cookie sheet and then package in a freezer bag. I can take out exactly the amount I need. Sometimes I make meals like roast chicken and sweet potatoes. I freeze that in a gladware container and and a pile of frozen veggies when I take it out. this is good for the days that I work. I hope this helps I've been doing this for about ten years now and it really makes a difference in my health. Sarah
