I need a raw milk primer!

Seriously.... I can't find info ANYWHERE!!!!

So, what has my buttermilk become after sitting for 2 months? It's separated and looks like whey and soft cheese.... I now know how to make butter, but even NT doesn't seem to have the basic answers I want.
Anyone have a great resource on raw milk and what it does when it sits or how to make it become something specific?

No great resource that I know of, but when the milk has separated like that, you can still shake it up and use it in baking, or else you can strain it through a clean cotton or linen cloth. You will end up with whey and curdy soft cheese. The whey is great for soaking things with and the soft cheese is just really good plain or on crackers or bread.
