DH is never full after dinner, and I'm having trouble thinking of things to add to the meal so that he can get enough to eat. I normally make some sort of casserole for dinner, and between DH, DD, and I, we eat the whole thing. I generally have a piece of bread with dinner, and that's enough for me. DH has a salad with dinner but doesn't want bread. Any suggestions?

What goes in his salad? I would start with modifying the salad- add hard boiled eggs, add cooked beans, add meat and/or cheese, if these things are not already included in the salad. I would also try to make sure he is using a higher fat dressing (don't do 'splash of lemon" for sure)- like blue cheese, or make a ranch dressing and add parm cheese (or any dressing and add parm or feta cheese, anchovies (blah), etc) (tomatoes are an appetite stimulant by the way so maybe go easy on the tomatoes) Dried fruit also goes well in salads- we love dried cranberries in ours or sundried tomatoes.
Assuming you don't actually want to cook more each night- I would next try- adding fermented things as side dishes- he can eat anytime, always ready. Make up a 'side' that he can also have any time- this could be a potato salad, tabbouleh, 3 bean salad, a salsa (I make a black bean, corn and salsa dish that normally we eat with chips, but I eat it without chips also) These are kept in the fridge, ready to go for sides, snacking etc. You can even prepare a soup for anytime supplementing.
Fiber and Fat are what help us feel full the longest. You could possilby try adding a little extra butter to his casserole portion, or etc cheese or creme fraiche (sour cream...) You could try adding some beans to the casserole itself- or simply having some cooked and warmed to add to his casserole, for the fiber. You can try adding an apple to the salad, or the casserole (also great source of fiber)
You said he doesn't want bread, what about biscuits- would he eat a biscuit with his meal? My hubby is not interested ever in plain bread, but will eat biscuits or corn bread etc.

I have this same problem with Dh. He's always looking for something else to eat. He'll finish his dinner, with extra servings sometimes, and still be hungry. There could be more dinner left over but he definately wants something else. Else usually ends up being cookies, ice cream or chips, or he just drives to the nearest fast food joint and picks something up from there.

Cottage cheese, pickles, pickled beets (or any pickled vegetables), olives, applesauce, bean salad, cubes of cheese.

What about adding a high fat dessert to the menu, like coconut candy squares? Or a dairy based dessert. i'd definitely be adding plenty of fat to the salad, as the pps suggested.
