Hidden liver

Well in attempting to add some organ meat to our diet, I decided to try hiding some liver in ground meat. MY dh LOVED the taste. I don't think my kids noticed at all (no one said anything anyway) I added about 1 lb, maybe a little more to 10 lbs of ground meat. (I know not much, but it is a start LOL) I pureed the liver in the food processor- then added it. It helped hte meat stick together also.

Thanks for posting this I have some (gross) liver in my fridge that I cooked up last week. I think I will purree it and hope for the best in our spagetti too

I have hidden liver in spaghetti and meatloaf, it's really a great way to sneak it in. I also put it in soup. Chopped up small enough you don't even know it's there unless you look for it. It's such a relief to know I can eat liver without tasting it!! Yay for life!

Spaghetti is such a great idea!

I haven't made meatloaf but I need to start and remember to add what I have of beef liver to it. I don't think we'll eat it otherwise. DH is resisting the idea of meatloaf completely and I think it's because he got burned out on it when he was younger.

I also do it in our weekly spaghetti - I cook 1lb of beef liver as per the NT directions (I don't bread it though) and let it cool, then process it in the food processor. I add 1/4 lb of this to each 1lb of ground beef I use in our spaghetti sauce. Works for us!

Another thing to try is meatballs. I always make my mom's BBQ meatballs and we love them. The sauce would hide any taste of anything you hide in the meat.

Some of the farmers I deal with sell it already mixed, I think the ratio is 1:4 or 1:5. If you're able to get your meat directly from the farmer, you might want to ask about this option, since it saves some work.
