Hi Ladies,

I am soooo "meal planning impaired" it's shameful!

I love all of your meal ideas.

A question for all of you.....do you have a set day that you do your meal planning,followed by a certain day that you shop? And is your family involved in the process, or do you just do it yourself?

A question for Darbi- I noticed that you included doing,"Tasks" as part of your meal planning. I love that! Is that an idea of your own, or did you get the idea from a cookbook/home organizer book?

I plan meals on Sunday, shop on Monday. I do have a "Dad's Choice" night and on that night I ask DH what he'd like on the menu. That's really about as much as he is involved in any of it, and my DS is too little. I also have a spot on my meal planning sheet for tasks. If I dont, I forget to soak the beans or defrost the chicken!

I usually try to plan on Thursday & then hit the Farmers Market & Trader Joes on Friday. It isn't the most ideal way since we are gone alot on weekends, but I like the Friday farmers market. If I had my way I'd plan over the weekend & shop Monday.

Dh is generally not involved because if I ask him what he want I am ALWAYS met with a very frustrating "I don't know" or "I haven't thought about it" But that is another rant for another day I guess

OK here is our plan for this week. Lunches are leftovers from the night before and Breakfasts are pretty much the same as last week.

Sunday - Chicken Pasta Salad, Veggies
Monday - Tilapia Nuggets, Broccoli, Parmesan Couscous
Tuesday - Quiche, Caesar Salad
Wednesday - Cobb Sandwiches, Salad
Thursday - Quick Fiesta Casserole, Guacamole Salad
Friday - Ravioli Lasagna, Rolls, Caesar Salad
Saturday - Zucchini Beef Bake
Sunday - Leftover Night or something from the pantry/freezer if there are no leftovers.

Lunch: frozen pizza (yuck)
Dinner: pepper jack chicken pasta, mixed veggies, garlic bread

Monday, August 27
DS's Lunch: chicken sandwich, Ritz chips, yogurt
My Lunch: Lean Cuisine spaghetti
Dinner: quesadillas

Tuesday, August 28
DS's Lunch: vegetable soup, Ritz crackers, banana
My Lunch: vegetable soup, Ritz crackers
Dinner: cheesy beef penne pasta, purple hull peas, biscuits

Wednesday, August 29

DS's Lunch: waffles with syrup, strawberries
My Lunch: leftover pasta & peas
Dinner: baked lemon pepper tilapia, rice, broccoli with butter sauce

Thursday, August 30
DS's Lunch: chicken sandwich, applesauce, granola bar
My Lunch: leftover tilapia, rice & broccoli
Dinner: sloppy joes, baked fries, salad

Friday, August 31
DS's Lunch: chili, oyster crackers, banana
My Lunch: chicken sandwich, applesauce
Dinner: rolled quesadillas, black beans

Saturday, September 1
Breakfast: pancakes & fruit
Lunch: leftovers/clean out fridge

We'll grocery shop Saturday afternoon for next week.

Our menu for the week looks like this - breakfast is always either oatmeal, steel cut oats, or pancakes. Lunches are either leftovers or eggs.

Saturday: Chicken breasts stuffed with creamy parmesan-basil, corn on the cob, creamy greens.
Sunday: Crockpot pot roast with potatoes, edamame
Monday: Lentils and rice with carmelized onions, turnip greens
Tuesday: Braised potatoes with eggplant, tomatoes, peppers, onions, and garlic served over fresh bakes bread
Wednesday: Skillet lasagna
Thursday: Pesto pasta with zucchini and onions
Friday: Homemade pizza night!

B: eggs & biscuits w/ leftover gravy

D: creamy Italian chicken w/ rice, lima beans, crescent rolls

Monday, September 3
B: chocolate chip muffins, fruit
L: out
D: chicken soft tacos, refried beans, Mexican rice

Tuesday, September 4
Grilled steaks, baked potatoes, grilled corn on the cob, salad

Wednesday, September 5
BLTs & baked fries

Thursday, September 6
Sesame chicken & lo mein noodles

Friday, September 7

OKay, this isn't my plan for next week, but it's what I made this week.

Monday-Pasta sauce(jar- with me adding pureed squash and carrotts) with Penne

Tuesday-Org. Turkey hot dogs

Wednesday-Shepherd's Pie made with turkey,summer squash and carrotts.

Thursday-Chicken stew

Friday-Mexican takeout.:

Saturday-DH is grilling kabobs-steack for him and the DC,Chix for me with tons of vegies for all of us.

I needed comfort food this week-DD has been DXed with Anxiety/Panic, and my Mom had surgery to remove a tumor on her Thyroid. Looking back, wednesday and Thursday's dinners were to labor intensive for me.

Mon: leftovers from barbeque, pasta salad, hamburgers

Tues: chicken/green bean stir fry w/ rice
wed: BLT & some type of potato
Thurs: pesto w/ pasta, tomato salad
fri: roasted peears w/ ginger/maple syrup, lettuce, dressing not sure what else

I buy all my ingredients for meals but don't plan which day I'll make them. Just whatever I'm in the mood for. And we both work full-time so I only have to plan for dinner.

So this week we're having:
That lovely quiche recipe from wife&mommy (I'll actually be making that in a few minutes!)
Tacos
Baked ziti
Spagetti
Fish sandwiches (just frozen fish fillets, it's my whip-up meal for when I don't have a lot of time) and green beans
Peirogis and steamed broccoli with cheese sauce (another whip-up meal)
French toast and scrambled eggs
Chicken and stuffing casserole (completely unhealthy but DH loves it)

I'll probably stop by the farmer's market on Wednesday and buy some fresh veggies, too.

Lunches: Leftovers, PB& Honey Sandwich, Tuna Sandwich, Fresh Fruits, Carrot Sticks, Celery Sticks, Sliced Peppers, Sliced Tomato

Snacks: Dried Fruit, Nuts & Seeds, Cheese Slices, Fruit, Veggies, Yogurt, Homemade Energy Bars

Dinners:
Sun- Chili & Cornbread

Mon- Spinach Lasagna & Salad

Tues- Homemade Tomato Soup and Quesadillas

Wed- Chicken Boi, Baked Rice, and Steamed Broccoli

Thurs- Stroganoff over Egg Noodles & Squash

Fri- Homemade Pizza (Canadian Bacon and Pineapple) & Salad

Sat- Open

OK, I'll play! I just did this today, and it took me, like, hours It's going to be a hectic week though, so I really need the stability of a plan. Although, I just reread my whole plan, and wow, there's a lot of cheese in there Mmmmm...cheese!

Monday
Breakfast: Baked oatmeal, fruit
Lunch: Grilled cheese on fresh bread, carrots and dip
Dinner: Coco-pina crockpot ham, corn on the cob, fresh bread


Tuesday
Breakfast: Porridge, fruit
Lunch: Noodles and butter, veggies and dip
Dinner: Turkey Cheese Broccoli Pockets (extra biscuit dough for Wednesday)

Wednesday
Breakfast: Waffles, smoothies
Lunch: Ham and cheese sammiches, veggies and dip
Dinner: Cheesy chicken breasts, stir-fried asparagus, cheesy biscuits

Thursday
Breakfast: Yogurt, granola, fruit
Lunch: Tuna melts on cheesy biscuits, veggies and dip
Dinner: Spaghetti and sausage, salad

Friday
Breakfast: Muffins, fruit
Lunch: Leftover spaghetti, broccoli and dip
Dinner: Bean/cheese/corn quesadillas (leftover chicken from Wednesday?)

Saturday
Breakfast: Baked oatmeal, fruit
Lunch: Cream cheese and jelly sandwiches
Dinner: Pizza with family? Cake?

Sunday
Breakfast: Crustless ham and cheese quiche, fruit
Lunch: Mini pizzas (leftover sausage? veggies?)
Dinner: Roast chicken, sweet potatoes and baked fries, Cheesy Harvest Vegetables

I don't plan out days I'll cook meals. I just make a list of enough meals to last and then cook by mood. If not I end up with a lot of leftover stuff I never cooked. For the next 2wks we'll be cleaning out the pantry so some of the meals I'm planning I haven't tried yet. Here's our list:

Breakfasts: cereal, oatmeal, eggs, bacon, yogurt and granola, toast, pancakes, fruit bars

Lunches: chicken noodle soup, veggie soup, sandwiches, pb/j sandwiches, ramen noodles, pizza, beef stew, sloppy joes

Dinners: Southern Lima beans w/rice, Veggie soup, Cajun blackeye pea soup, Italian style kidney beans, Lemon-pepper chicken breasts, grilled chicken breasts, tuna casserole, tuna salad, beef stew, meat & potato soup, chicken spaghetti

Sides (most won't need sides): oriental style rice, alfredo noodles, macaroni, blackeye peas, other veggies

Snacks: pb crackers, crackers w/ cheese, granola, 100 cal. snack packs, pretzels, fruit, chips, popsicles, applesauce, jello


Once I finally get rid of all the stuff in the house now (about 2-3wks worth) I can buy stuff we'll eat again and get more creative. I still have to find something to do with what will be left after these meals!
