Soaking flour in yogurt?

This is my first ever attempt at soaking anything... I am going to make pancakes and I'm soaking my 2c flour in 2c plain yogurt... do I need to add water or anything? It's sitting in a bowl on my counter top with a teatowel covering it... I can't seem to find soaking instructions in NT... maybe that's because it's a straightforward thing .... Please tell me if I'm doing it right :

Yes, that's fine.

Generally, if you use enough yogurt to get all the flour wet, you're ok.

However, I just did this last night, and I didn't like them:

I may need to tweak it somehow. mine came out all rubbery....

It's best to start out using a recipe instead of experimenting.

I've got quite a few in the recipes section of my website.

They turned out okay - I only soaked them for 7 hours, but that was better than nothing. I used half whole wheat and half white flour : but I could tell the difference from not soaking at all... still not great, but better. They still sat like a brick in my belly though

Leilalu, if you're using the NT cookbook recipe, I'm with you...I've tried them 3 times with various soak lengths, and found them icky every time! Thin and rubbery and wholly unpleasant. I'm going to check out krankedyann's site (which I just found out about last night & signed up for her menu mailers!) to see if she has better recipes, which I'm guessing she will.

I've found that I have to tweak almost all of the NT baked goods recipes that I've tried (like, adding an ENTIRE ADDITIONAL CUP of soaked flour to some recipes!) and THEN I end up liking them - I think Sally Fallon & I have different ideas about what makes a successful baked good! But the pancakes, still haven't figured those out. : I just don't eat them.
