Here is a one pot recipe I have that the kiddos love.
I'm wondering if any of you have any ideas on how to make it healthier? Before they added 2 T of butter, 1 cup full fat sour cream and cooked the noodles separately. I've added the mixed veggies, green pepper, taken out the other things that were fattier.
Crockpot Chicken/Turkey Pasta
2 C shredded/diced cooked leftover chicken turkey
Can condensed cream of mushroom soup
1 C light sour cream
1 onion chopped
1 green pepper chopped
2 C skim milk
I cook that for a little under 3 hours on high. It will be rather "soupy" at that point. Then, I add:
1 1/2 cups mixed vegetables (I usually have extra precooked)
4 cups egg noodles.
I serve topped with grated parmasean cheese.
I don't feel like I'm really going "whole foods" so much with using the cream of mushroom soup.
