I just joined a raw milk co-op, got my first gallon yesterday! I just made some butter from the cream and now am wondering if there is some way to use up this whey. Any ideas? I thought I read someone baking with it once but I am not sure.
It's buttermilk, but unless you culture it, it's not quite the same as the buttermilk you'd buy from the store (the thicker stuff). It keeps for a long time, which is nice. I made a chocolate buttermilk cake for ds1's birthday, turned out very nice. Also used it for soaking grains instead of whey, in pancakes, just the usual. You can also make cream cheese with it apparently!
