The Daily Menu Thread: Saturday

The board seems slow today... I gather that many of us don't have access on the weekends. I occasionally wish I didn't have internet at home- I would get a whole lot more done!

Anyhoo, I have been eating nothing but crap today. I can't taste anything with this stupid cold...

breakfast: coffee with soy milk, bagel with cream cheese, orange juice
snack: yogurt smoothie
lunch: tofurkey and cheese on an onion roll
snack: peach, 2 oreos
dinner: unknown as of yet

*nothing* appeals to me right now. I have to have some veggies at dinner... something to negate all the carbs.

How are you all doing?

Ugh. Today has not been great for me, either.

Breakfast: 2 eggs, toast, OJ
Lunch: hot dog (I know..), mac & cheese, apple
dinner: leftover sloppy joes, green beans

I'm going to make a big ol' fruit smoothie with protein powder soon, maybe that'll make me feel better about how I ate.

I really can't wait til I'm allowed to do my thing. Like grocery shop and cook good meals!

UGH- I feel WICKED dehydrated too! I don't know if it is my stoooopid cold, or the humidity (it is really humid here)... I can't get enough water! I am on my fourth quart today... and still going strong. I think I will sleep in the bathroom tonight...

ETA: is it just me, or does anyone else get cravings from this thread? I am now in DIRE need of some grapenuts! Of all things...

Not a good eating day here either...

I had cheerios w/ milk for breakfast, lots of chocolate milk, some kool aid, a couple animal crackers, egg salad on wheat for lunch with craisins (not on the sandwich, ewww), bagel bites with carrots for dinner. And I plan to have some ice cream or a Snickers ice cream bar a little later.

I plan to get back on track tomorrow after I go grocery shopping. It's been over 100 degrees here for what seems like weeks (over 90 for the last month) so I keep trips to a minimum!!!

Hmmm. I am tempted to make the beet cake. Did you like it? I am going to guess yes if you are hankering for more... I have a huge beet on top of the fridge begging to be used- what better way to get in some veggies than via CAKE?

Brek - oatmeal with pecans
Lunch - fruit, potatoes with avocado, devilled egg, almonds
Snack - bean and avo taco, cashews, mango
Dinner - 2 pieces yeast-free spelt bread with earth balance, carrots, spaghetti with tomato sauce

Will probably have my night-time snack of cereal.

Yes, it was wonderful. It made a huge cake! I think the frosting added the final touch, though. Mine was made of one egg white and 1/2 cup of honey, from my Sue Gregg Desserts cookbook. A cream cheese frosting would be perfect, as well.

The recipe I linked to uses a lot of beets--I think I had 6-7 beets of various sizes, and used them all to make 3+ cups of shredded raw beets. Here's a recipe I found when I was googling for beet cakes that only uses one large beet--and it's chocolate, too!
