Need an easy chicken recpie for tonight

Hello everyone.

I just laid out some chicken breasts to thaw and am needing something yummy, yet easy and not too time consuming for dinner tonight. I have a migraine along with PMS and don't feel like slaving tonight, but everyone still needs to eat.

Can you help? TIA!

I love to stuff my chicken breasts with cream cheese (I flavor it with roasted garlic or cajun seasoning). Then I s&p it and pan fry it, with a lid so it stays moist. Then I drizzle a balsamic vinegar reduction over top when it is done and it is so so so delicious!

Wow! That does sound really yummy!!! Too bad I don't have any cream cheese right now.

Not sure that this is very NT, but here's one of our favorite, quick and easy chicken breast recipes:

Season chicken breast with salt and pepper and saute in olive oil until browned along with an onion (often I do the two separately b/c my pan isn't very big). After the chicken is browned on both sides and the onion is soft, add a big can of Muir Glen fire-roasted chopped tomatoes, dried herbs of your choice (I usually do a mix basil, rosemary, oregano and thyme), and a 1/3 C of balsamic vinegar. Let it simmer for 20 minutes.

I do have all those items, and that sounds easy and yummy! Thank you.

How long do you think balsamic vinegar is good? I've had mine for a few years.

Heh... not sure. The only time I've tossed my balsamic vinegar it was when it smelled off and it was a little chunky inside. (ewww!). Otherwise, I think you're good???
