Question about stock and scum

Thread Starter
I am making chicken stock as per NT. I am using a crockpot though since I had to be out for several hours today. When I got home there is no scum to take off the top. Is that bad? Have I ruined the stock if there was scum and it was reabsorbed? Can it do that? I would like to know if it is edible. Thanks.

hm, from what i heard somewhere, the scum can negatively affect the flavor, but so long as it tastes fine i don't think it should be a problem.

I don't know the technical answer, but anecdotally I've never had an issue with it, and I frequently make crock-pot stock that has no visible scum. Even when I make it on the stove I don't get much scum and I'm never able to get it all anyways
